how do people get things like dragon eggs and quartz and water/lava blocks

Some used to be sold from villager trades.

 

All of these items were previously sold by villagers on the server. I'm not actually sure where dragon eggs came from, but the others came from villagers at /warp grass, /warp spawn, and the donor trades at /warp skybase. These trades have since been removed, so the price has gone up due to supply and demand. The only way to get one at this point would be to trade someone who has one already.
