There were no logs of him ever putting diamonds in my chest, but logs in snow's.

 

Well here is the thing. The Diamonds were in a chest that had this name on it. He was also in your coop. If you didn't want him to take your Diamonds you shouldn't have added him to the coop, or add his name to the Lockette in the first place.
