Hey! I need some ideas of what farms to build next. I don't want to duplicate any ones I have now. Right now I have a melkin, cane, and pig grinder farm. What other types can I build? I can't build a hostile mob grinder, unfortunately. What else could I build to make a profit?

Wheat is good if you AFK a lot!.
If you AFK 24/7, due to the low TPS and tax, it takes about 127 days just to make back the money you will spend on the dirt.
Easiest way to work out how long it takes is to consider the cost and income from just one dirt block.

I've just assumed 32% tax because if you're a serious farmer, you'll pay that.
I've not considered dynamic pricing as wheat often sells for less than $0.40.

If you only play an hour per day on average, it will take you over 3000 days to make your money back.

And yes, all that time you spend just trying to make your money back, before you have made a single cent of profit, you are being taxed.

Drogo is assuming that you start off with a whole wheat farm to simplify calculations. You can't really calculate for compound interest without making major assumptions because people don't expand their farm as soon as they receive another $800 for a piece of dirt.

It's not compound interest. There are clear profits once you finally break even and they are pretty good.
So if and when you get to this point, you will be bringing in about $6.32 per day for every block of dirt you placed if you continue to AFK 24/7

As Sky said, I've kept it pretty simple but it gives a good idea of how long you will be waiting to see any profits.
