I've got a bit of a problem, my island is MASSIVE, no joke (100 blocks in one direction), I've read that your island shouldn't be more than 49 blocks, what do I do?

The Clear Answer Is To Reduce Your Island, But That Isnt Easy
So At First I'd Just Move Everything Important Within The Correct Area, Then Go From There.

 

Yeah just make the island smaller.

 

But my mob spawner is located at the far end of the island along with my potion lab, food farms and my café.

Darn! that means I've just lost half of my carrot and potato farms along with the tower of my mob trap.

 

You can always make more layers to your island to save space.
Floors, elevators, etc.

From your bedrock, out 49 blocks from each direction. Expand that vertically, from the void to the sky. That's how much space you got.

 

^That would be a nightmare.

You can build from just over the void to I think y=256. Just like normal.
