    600 isn't horrible, compared to 1500.
    go in terminal and do:
    ping skyblock.net

    I did traceroute and ping, and it was roughly 40ms.

    then it's something to with norton or something wanting mc to die.

    I don't have norton or any protection like those types
    These are the only applications open right now:

    Obviously you are having packet loss
    But it's only on mc servers?

    Only MC servers. No other game, and no other website.

    and since you don't have any anti-virus, of course a MAC wouldn't notice it

    every time you open your minecraft whether its a hacked version or not, it could be causing you packet loss every time you join a server, which in result ends up in a higher latency

    I have like 12GB of RAM mate I don't need more thx tho

    Also, it didn't work. ;s
    Should I delete all of the Minecraft files except the screenshots (I need)?

    This is a guess, but as soon as you click skyblock a couple seconds later does it just disconnect you?
