I think its better that whe do the server on 1.7.10 bechaus there is so mutch lagg :/

1.8 had a lag reducing feature... so it should be less laggy, although I can't go on the servers, if it is laggy for the majority it should be back to 1.7

 

Bukkit version will not change (it's only adapted to accept 1.8 clients).
You can still connect in 1.7 clients.
