It was collecting wheat at $0.38 each.

Croppers don't collect 3 per second, it's 3 per 20 ticks.
So usually about 1.5 per second.

Dex advised otherwise just a couple days ago.
So unfortunately, adding more layers to your farm won’t do anything to counter low TPS.
Tax is collected every minecraft day which is 24000 ticks and as Timutt has said, the most you can sell per tax period is 3600….... in theory.

 

Been doing a lot of testing on this, and for a 2-Chunk 24-Layer wheat farm, the most I should be able to make (at 0.37 crop price) is $1,332*2 so $2,664

I tested over 20 tax cycles at this price and went over $2,664 a total of 5 times. Two of those times I surpassed the $3,100 mark.

Is there something about Croppers that we don't know? I did more testing and realized it cannot be seed-related. There could be a boost in $ somewhere, or potentially more than 3 per 20 ticks.

 

Croppers do appear to collect more than 3 per 20 ticks at times.
If you’re not online at tax time, say if you pop over to SB briefly, I assume the tax you should have paid will be added to the next tax period and that might result in a larger than expected income reported for that period.
