given the fact you listed a gtx 1660 super and a ryzen 5 2600x and 16 GB of ram (didn't say what speed it is running at) you will get more than 200 fps. My laptop has 16 GB of DDR4-3200 ram (single stick sadly) and a 10th gen i7. I get about 180-200ish when I play Minecraft plugged in. Otherwise the total fps drops down around to 60. If you really play Minecraft then a Radeon 570 or a 1650 will do just fine. Though I would not buy a graphics card atm due to their high prices (normal price for a 1650 150ish right now its 400). Until the price drops you can either get a used graphics card from ebay, offerup, etc. or just wait
MC is a CPU heavy-game, meaning unless you install some graphic/shader mods, the GPU you get will not matter very much. Then again, older games are generally more CPU-heavy so this is not unique to MC.
Minecraft is very CPU and RAM intensive. You’ll exceed 200 FPS. I’ve actually heard of people consistently running Minecraft at three figures with integrated graphics.
You need to know if your CPU is going to be compatible with your motherboard, as well as your other parts. Decide on a motherboard before picking your other parts as it may help in the future, eliminating the cost of buying a new motherboard and RAM just so you can upgrade your CPU is one of the best things you can do. But if you choose specs similar to this, you'll get 200+ fps easily - I'd say 500+ on OptiFine. Laptops are very bottlenecked when it comes to performance and the reason your FPS drops when you run MC on battery is because of the voltage limit set on batteries - this will not happen on PCs. The equivelent laptop specs to the PC parts that hzrd's listed (essentially my laptop, except mine's better) can run Minecraft consistently at 250fps. RAM speed doesn't really matter, as long as it's more than 2500 you won't have any problems. A lot of people have said that Minecraft is a very CPU intensive game, which it is, but it's also possible to use a GPU's power to make the game run better. I'll show a bit of a demonstration: - shot at the same location, same amount of entities, same amount of blocks, same settings. With GPU power: ~260fps average Without GPU power (integrated): ~160fps average Obviously it shows GPU power to be better. JUST getting a good CPU won't be enough to run Minecraft as well as you want to in my honest opinion. So invest in a good GPU but make sure you aren't bottlenecking it either by getting a cheap CPU (ie Don't buy the latest-gen Nvidia RTX 3090 Ti and then get an Intel Centrino 2nd gen), as this leads to your GPU being nerfed into the ground. The current parts you've selected aren't bad. I will, however recommend a Ryzen 5 3600X as they are only $50aud ($30usd) more and have about 25% more power. Just make sure you buy a motherboard that's compatible with your parts... and thats all
Yeah, it is very low demanding. I'm running integrated graphics on a 3rd gen i5 and exceed 100 with Optifine.
i have a less powerful build and can run minecraft very well. Its enough for sure. 1050ti, intel pentium g4560, 16gb ram and installed on my ssd.

Good luck finding a Ryzen 7 5600X- they don’t exist lol. To be honest, I wouldn’t go for a Ryzen 5 5600X or a Ryzen 7 5800X at your price range. I don’t think it would be wise pairing a mid range processor with lower end parts, especially if you’re using the build for gaming. You’re probably better off going with a 3600 or a 3600X. They’re less than half the price of a 5600X (in the UK anyway) and will suffice well enough for a low end budget build like this one. I also recommend using websites such as https://pcpartpicker.com/ to help select your parts. They will display compatibility issues, prices across a range of different stores in your country, and notify you about BIOS updates your selected motherboard may require.
I bought a rtx 2080 for my computer, a bit too much and I should've gone lower. A 1660 should do fine.
A Ryzen 5 3600X is more than enough, it has the equivelent power to now's i7's for a little less than half the price. I'd recommend spending more on your GPU, as a 1060 is starting to go quite out of date, try going for at least a 1650 super. your choice if you want to spend heaps on a 1TB SSD or spend half the amount on a 500GB or even 250GB SSD and then buy a 1TB HDD. Hard Drives don't hurt. Other than that you should be good. Make sure you buy DDR4 RAM as that's what your motherboard supports.
