Heya! This is most certainly possible! It is used in most current casino's. When I am online later today I can show you, but it is easiest with a hooper into the shop, with a comparator reading the hopper, some rs torches and a dropper underneath the hopper. This will make a signal as soon as something is bought out of a filled shop chest.

There are 2 main ways to do it, although the dropper one is faster.

Essentially, you have a dropper constantly trying to spit a block into a chest, but isnt able to because the chest is full. Once someone purchases something, and a spot opens up, the dropper successfully is able to spit into the chest, and is now empty. Now that it is empty, a comparator realizes it, and gives out no signal. That signal would be directly powering a redstone torch, to invert it. So once the dropper activates, the redstone torch turns on, and gives you your redstone signal. But you must also take that signal and use it to fire 1 more (item) into the original dropper, so it is able to repeat the process.

It sounds a lot harder than in is. I can show you the design once I get online.
