I've removed everything from my ender chests and shulkers and put them in a regular chests just in case.

On the last Economy beta the chest shops couldn't be broken or have items taken out. Have these issues been fixed? It'd be good to know because there hasn't a confirmation on if those chests data will be saved or accessible with the new update. The last I heard was that the devs would look into fixing those issues but that they recommend using the new chest shops. I'm looking forward to the update but I think as Drogo and others said it'd be good to know before the update.

 

Worst case scenario, a staff member will have to break those signs. I'm pretty sure your items will still be secured inside those chests. You might have to take a number though as I'm sure staff will be very busy answering player queries right after the update. You are probably better breaking your shop signs before the update just to make sure. It's a different shop plugin they are using on 1.19 so you'll end up having to break those signs one day anyway.

 

If there is any likelihood of a rollback after the update, would you advise against webstore purchases or grass/gift card trades?

I agree. This is really important and we need to know the chances.

 

Is it that difficult to just refrain from store purchases for the first week or so?

It may be but it's still important to know if there are going to be instances where people purchase something and don't receive it.

How exactly are we to “be cautious” with trade shops?
Obviously we won’t be logged in so we can’t really “be” anything, other than worried.
Your comment raises concern but really offers no advice.
